Coconut cupcakes rock!
Even if you think you do not like coconut, please try these. They are from "The Barefoot Contessa Cookbook." They are a creamy, sweet delicious bite. The cream cheese frosting with a shredded coconut topping perfectly balances the buttery, almondy, coconutty cake. The first one to make these in my family was Carolyn. I have been hooked since. They are very pretty as well!
