Ina and Martha Combined - Salmorejo with Taquitos



Ina Garten has a new cookbook coming out later this year called Modern Comfort Food - I have one on pre-order (of course!). However, she shared the Salmorejo as a preview. It is a cold tomato soup. PERFECT! So if you saw my tomato slab pie, you know I was looking for ways to use our tomato harvest from the porch. However, this got even better. I was also able to use the onions, basil and green peppers that Mark grew. The recipe calls for red onion and red pepper, but I substituted. The night before I made this we had pizza and garlic knots from the local pizzeria - the first pizza we had ordered out in the past six months (pandemic times). I made croutons from the leftover garlic knots. This was easy and very tasty!!


So I needed to complement the soup for a complete supper so I made Breakfast Taquitos from Martha Stewart Living September 2020. These were super yummy and so easy. I had all the ingredients in the house. I also cut the recipe in half and made four so one was left for Mark's lunch the next. Easy peasy - eggs, breakfast sausage, cheese, salsa and tortillas.
