Carolyn introduced me to chef, Tieghan Gerard, and her website halfbakedharvest.com. She also gave me one of her cookbooks for Mother's Day last year (2021) - Half Baked Harvest Super Simple. What made the cookbook even more super special was that Carolyn wrote little sticky notes about different recipes that she had tried. Some stated little changes or additions and some stated things like Family Favorite or Yummo!! I have tried several of Tieghan's recipes, but this was my first. I first had it at Carolyn's and Ryan's one summer evening. It was the star appetizer, and I mean the star appetizer. On the website, Tieghan writes, " A mix of sweet and savory... super, simple, easy tarts that are garden fresh and so delicious."
I made them for a get-together at the neighbors. The rosemary garnish is an Ina Garten addition and makes the plate even prettier. These appetizers are crispy from the puff pastry and creamy from the layer of brie cheese. They are sweet from the peaches and honey. They are savory from the pepper, rosemary, basil and shallots.
You can find the recipe under appetizers on www.halfbakedharvest.com.
