Pear and Cranberry Crostata - Another Barefoot Contessa Winner!!

I bought a few pears, and they needed to be used or would turn to mush and be thrown away. Pears for me are one of those fruits which have to be perfect (my perfect) to be eaten as fresh - sweet, not at all mealy, cold, soft but crisp. If the gods align, they are then perfect. For a cooked dish, they are much more forgiving. In this dish, they were amazing. I made while still in the midst of the COVID-19 crisis so I had no cranberries so substituted raisins - they worked. I had made an apple crostata a couple of months ago so still had a disc of the frozen pastry in my freezer.


This dessert was amazing!! The crust was perfect!!!! The fruit and topping were a perfect blend of sweet and tart. It was a touch of sweetness really needed in these difficult times!!!


I found the recipe on Food Network. It is Ina Garten's. Not sure if in any of her cookbooks. Another Barefoot Contessa winner!!
