This asparagus dish is wonderful! Look how pretty it is! It is easy to prepare and is served at room temperature - a great party dish!
My friend, Susan, made this for me at a dinner party year's ago. It has been a go to for me very since. When I last made the recipe as pictured here, I displayed it on a lovely platter which my neighbor gave as a hostess gift at one of our Murder Mystery parties!
Sesame Asparagus
1-pound fresh asparagus, ends trimmed, each stalk cut diagonally into thirds
½ teaspoon vegetable oil
½ cup finely diced red bell pepper
1 tablespoon soy sauce
½ teaspoon oriental sesame oil
2 teaspoons sesame seeds, toasted
Cook asparagus until crisp tender, about 3 minutes. Drain. Rinse under cold water and drain well. Can be made a day ahead. Wrap in paper towels and chill.
Heat vegetable oil in large nonstick skillet over medium-high heat. Add bell pepper and stir 1 minute. Add asparagus and sauté until heated through, about 2 minutes. Add soy sauce and sesame oil; toss until asparagus and bell pepper are coated. Transfer to serving plate and sprinkle with sesame seeds.
