It's TOMATO season on the Lewus porch. Even though the chipmunks are enjoying a fabulous tomato harvest - they are still leaving us quite a few!! I have been busy finding recipes to use tomatoes. This recipe from Martha Stewart Living September 2020 was a great find!!
The crust is easy to make and so flaky!! The use of the panko breadcrumbs on the crust before the cheese and vegetables kept every bit of the crust flaky and delicious. I omitted the cauliflower since I could not find one in the store that looked fresh. I also cut the recipe in half since just for me and Mark for supper.
It was a perfect bite for supper - cheese and veggies all in one! This would also make a fabulous appetizer for a dinner party and a vegetarian option.
On to more tomato finds for the rest of the harvest!!!
